Standing History Agave plant After 25 years or more, this plant blossoms and sends up a stock that grows inches in a single day. In the spring and early summer, the Sinagua, Yavapai and Apache Indians would gather the Agave hearts and roast them in covered pits. After eating some, they stored the rest for future use.
